Filled Cookies–Grandma Rae’s recipe

Filled Cookies (Grandma Rae’s recipe)
1 cup brown sugar
2 cups white sugar
2 cups of shortening, one of which should by butter or margarine
4 eggs
2 tbsp. milk or water
1 tsp. vanilla
6 cups flour
2 tsp. soda
1 tsp. salt
Cream sugar and shortening, add eggs, milk and vanilla. Mix well. Add flour with soda and salt. Mix well. Shape into roll size of cookie you wish. Refrigerate.

Filling
2 cups ground raisins
3/4 cups sugar
2 tbsp. flour
1 cup water
1 tsp. vanilla
Heat and let come to a boil. Watch as this burns very easily. Will be of jammy consistency. Slice roll thin, add spoon full of filling. Put another slice on top. This cookie does not have to be sealed as the filling will not run out. Cook at 375 degrees until lightly browned. Peanut butter, apple sauce, nuts and mince meat may be used to extend filling.
